Marinated Chicken

Perfect for grilling, this simple summer Marinated Chicken recipe delivers tender and delicious chicken, ideal for pairing with a fresh salad or grilled vegetables.

INGREDIENTS:

  • 4 Boneless Skinless Chicken Breasts, Thighs, and/or Drumsticks
  • 1/4 cup olive oil (or avocado oil)
  • 1/4 cup freshly squeezed lemon juice
  • 3 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried rosemary)
  • 2 tablespoons Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

DIRECTIONS:

1. Prepare the Marinade:
  • In a small bowl, whisk together the olive oil, lemon juice, minced garlic, chopped rosemary, Dijon mustard, salt, and black pepper.
2. Marinate the Chicken:
  • Place the chicken pieces in a large resealable plastic bag or a shallow dish.
  • Pour the marinade over the chicken, making sure each piece is well coated.
  • Seal the bag or cover the dish with plastic wrap.
  • Refrigerate for at least 1 hour, preferably 2-4 hours, for the best flavor.
3. Grill the Chicken:
  • Preheat your grill to medium-high heat.
  • Remove the chicken from the marinade, letting any excess drip off.
  • Grill the chicken for about 6-7 minutes per side, or until fully cooked (internal temperature should reach 165°F).
  • If you don't have a grill, you can also cook the chicken in a grill pan or on a stovetop over medium-high heat.
4. Serve:
  • Remove the chicken from the grill and let it rest for a few minutes before serving.
  • Serve with a fresh summer salad, grilled vegetables, or your favorite side dish.
      TIP: 
      • You can add more herbs like thyme or basil for extra flavor.
      • For a spicier kick, add a pinch of red pepper flakes to the marinade.
