Beef Oxtail, quite literally, put the "tail" in eating "nose-to-tail". They're an incredibly tender, collagenous cut that can be easily braised, slow cooked, or pressure cooked to make a delicious and nutritious stew or soup. Oxtails are a perfect balance between muscle meat and collagen, providing all the essential amino acids for good health and tissue repair.
