Spare ribs are cut from the belly and breastbone, behind the shoulder, of the pig. They're flatter than the curved back ribs and have just the right amount of fat which make them even more tender. Generally cooked on a barbecue or on an open fire, the spare ribs are traditionally served as a slab with BBQ sauce.
