Great Turkeys!

Since the only turkey size weight left because I ordered late were two 11 lb turkeys, I dry brined one and wet brined the other. This was the first time I ever brined a turkey. The dry brine instructions that came with the turkeys said to use two cups of salt and not to worry that it wouldn't be possible to use too much salt. I did not find that to be the case! The dry brine meat and broth were too salty for my taste, but fortunately my dinner guests favored the saltier flavor. Perhaps that quantity of salt is suitable for a larger weight turkey, it seems to me those guidelines should be spelled out more clearly. Overall, these turkeys were flavorful and tender.

Fantastic Service, Incredible Quality!

As a first time customer, I was very impressed with Aspey Farms! They were great at communicating and my order was shipped/delivered on time! The turkey we ordered was delicious! I ended up doing a spatchcock dry brine overnight with thyme, rosemary, sage, and lemon juice mixed in, and then smoked the turkey on my Traeger for approximately 4 hours at 180°F and then finished it at 325°F until the breast temperature hit 160°F (see recipe for more information: https://traeger.page.link/AzpouWt6RRyAXj9b8). All in all, it was flavor, juicy, and a huge hit!
