Beef (Wagyu-Angus) Tongue, aka “lengua”, is popular in several National cuisines, such as the dish “tacos de lengua” in Mexico (beef tongue tacos). While not many are accustomed to eating beef tongue, this nutritious organ meat is one of the most tender and juicy cuts that exists! After a few hours in the slow cooker, beef tongue shreds easily into tasty pulled meat (great for tacos!), or slices into rounds that can be seared and crisped up in butter or tallow on the stove. Wagyu is a Japanese cattle breed whose genetic lineage goes back thousands of years, while the importation of Wagyu into the US only recently began.
