Beef (Wagyu-Angus) Suet is the fat around the kidneys. It's an excellent source of pure animal fat, and has a variety of uses outside of being a healthy and hearty source of fat in your diet. You can render suet down into your very own beef tallow, or simply use pieces of suet to melt on a pan, providing a grass-fed beef flavor ready to pan fry your favorite ingredients in.
In addition to consuming suet/tallow and using it to cook with, you can make your own tallow candles, soaps, lotions, moisturizers, and even lip balms!

Wagyu is a Japanese cattle breed whose genetic lineage goes back thousands of years, while the importation of Wagyu into the US only recently began. Wagyu beef is famous for its copious marbling, leading to unparalleled buttery tenderness. The fat marbling in Wagyu beef has the highest percentage of any mono-unsaturated fat out of any protein that you can find in the US.
